Steak sauces with green pepper
- 2 teaspoons olive oil
- 2 shallots, chopped into small pieces
- 2 cloves of crushed garlic
- 3 sprigs thyme
- 2 tablespoons of brandy
- broth or water
- sweet cream
- 2 teaspoons mustard

Procedure:
- To the gravy from the steak add olive oil, shallot, garlic and thyme.
- Stir and let the heat for about 1-2 minutes
- Reduce the heat, add brandy and start flame (Be careful to avoid contact with flame)
- Increase the heat, add broth or water and reduce by half. Add sweet cream, mustard and bring to boil. Let cook a while and finally add green pepper and pinch of salt.

Steak sauces with red wine
- 2 small onions, diced
- 2 chopped garlic cloves
- 2 tablespoons of red wine
- 2 teaspoons Dijon mustard
- 2 teaspoons butter
- finely chopped parsley
- salt and pepper
Procedure:
- Bring the pan to boil with onions and garlic. It has to be soft
- Add red wine and mustard, reduce by two-third over medium heat
- Slowly stir in butter
- Take the pan from the heat, add parsley with season, salt and pepper

Cranberry Steak sauce
- 2 cups of cranberries or cranberry jam
- 1 large finely chopped onion
- 2 garlic cloves finely chopped
- 1 cup wine vinegar
- Worcester sauce
- brown sugar

- Mix all ingredients in a pan and leave on medium heat until sauce thickens
- After filter the sauce through a sifter or blend in a blender to obtain smooth texture
